Mediterranean Parsley Salad

I planted a beautiful herb garden into my greenhouse last year and the herbs survived over the winter.  I opened the door to discover massive, luscious bunches of parsley and lots of green onions.   It inspired me to create a mediterranean style salad that included lots of nutrient-dense parsley that not only helps to reduce inflammation, chronic disease; but aids in digestion. The bonus part is you finish your meal with a natural breath freshener!

Serves 4

Ingredients

¼ cup curly parsley leaves - stems removed

1 cup cucumber - chopped

1 cup tomato - chopped

½ cup green onions - sliced

½ cup Feta - cut into cubes (optional)

 

Dressing

¼ cup olive oil

1 lemon, juiced

1 tsp lemon zest

Salt to taste

Black paper to taste

2 cloves garlic

 

Instructions

1.  Wash and cut all salad ingredients and Feta, then transfer to a large mixing bowl.

2.  Whisk together all dressing ingredients in a small jar.

3.  Drizzle the salad dressings all over the salad then gently toss together and it’s ready to serve.
