Easter Monday's "Left Over" Lamb Pie

Day 91 –  It was a wonderful weekend at the cabin and then back home last night with everyone for dinner.   

Today we have a couple of stock-pots of turkey broth simmering on the stove.  We had a large turkey last night and we have been simmering the bones with chopped up onion and saved frozen veggie trimmings that we store in our deep freeze.  We are always feeding a large crew of family and we can accumulate quite a few in a month’s time.  We love to stock the freezer with 3 cup bags of broths to have for breakfasts, lunches and dinners.  It’s so yummy and full of collagen and joint & tissue repairing nutrients.  It’s a great way to nourish the gut.

    

The fridge was full of left over lamb leg from Saturday night’s dinner at the cabin, I topped it with last nights stuffing full of oregano, sage, and thyme, colourful orange yams, mashed potatoes, broccoli and gravy.   I might add some frozen garden fresh peas and nutritional yeast to give it a cheesy flavour.

Spring sunshine brings out the spring to-do lists so everyone is using this beautiful day to make our homestead special before we all head back to work tomorrow.
