Date-Sweetened Chocolate Truffles

INGREDIENTS

  • 1 cup Medjool dates, pitted

  • 150g Hazelnuts, toasted, separated

  • 1 tsp Instant coffee  (optional)

  • 1 Tbsp Warm water (for coffee)

  • 2 Tbsp Cocoa powder

  • 1 Tbsp Honey

  • 1 Tbsp Coconut oil

  • 120g Dark chocolate (70% cocoa, high quality)

  • Pinch of sea salt

INSTRUCTIONS

  1. Mix instant coffee with 1 Tbsp water (if using).

  2. In a food processor, grind 50g hazelnuts until small pieces, but not turning to butter. Remove and set aside.

  3. Add pitted dates to the food processor and blend until a smooth, sticky paste forms.

  4. Add remaining nuts, coffee, cocoa powder, and honey. Blend well.

  5. Chill the mixture in the refrigerator for 15-20 minutes, or until it's firm enough to handle.

  6. Scoop out small portions and roll them into bite-sized truffle balls. Return to the refrigerator.

  7. In a heatproof bowl, melt the dark chocolate and coconut oil using a double boiler (or in the microwave at 30-second intervals). Stir until smooth.  

  8. Add crushed hazelnuts to the chocolate, and mix well.

  9. Using a fork, dip balls into chocolate, drain slightly, then place on parchment paper.

  10. Store in the refrigerator in small truffle cups. Enjoy!
