This beautiful, ruby-red mocktail combines watermelon (known in Tractional Chinese Medicine as nature's natural "heat-clearing" fruit) and fresh mint (which moves stagnant Liver Qi and cools the upper body) to help you anchor all that vibrant Solstice Yang energy.

Ingredients
4 cups fresh chilled watermelon, cubed (deseeded or seedless works best)
ΒΌ cup fresh mint leaves, loosely packed
2 tablespoons fresh lime juice (adds a touch of sour to astringe leaking fluids from sweating)
2 cups room temperature or lightly chilled water (or coconut water for extra electrolytes)
1 tablespoon raw honey or maple syrup (optional, if your watermelon needs a sweetness boost)
Instructions
Load the blender: Toss your chilled watermelon cubes, fresh mint leaves, lime juice, and water into a high-speed blender.
Liquify: Blend on high speed for 60 to 90 seconds until the mixture is completely smooth, frothy, and vibrant red.
