Watermelon Watercress Salad
Dive into the crisp fresh crunch of watermelon paired with the peppery bite of watercress! This salad is easy to put together and has a delicious refreshing flavour to enjoy as the weather heats up!
Ingredients
4 oz watercress
1 mini watermelon, roughly cubed
1 cucumber, diced (optional)
1 cup feta cheese
1/2 cup sliced almonds
1 packed tsp fresh mint, minced
1 packed tbsp fresh basil, minced
Lemon zest, 1 lemon
2 tbsp olive oil
Salt, to taste
Directions
Add watercress, watermelon, cucumber, feta cheese, sliced almonds, fresh mint, fresh basil, lemon zest, olive oil and salt to a large bowl. (If you can’t find watercress - Arugula, Purslane or Nasturtium leaves are also a great substitute).
Mix well
